Pamplona Tapas was born from the childhood dream of founder Marisol Crespo. Thanks to the collaboration of Chef Errol LeBlanc, Marisols dream came true in Pamplona Cocktails and Tapas, with a menu of authentic Spanish tapas and dishes interpreting classic recipes from throughout the regions of Spain with the best available ingredients. Our name, Pamplona, comes from the capital of Navarre, famous worldwide for the annual San Fermin festival, truly representing the heart of Spanish spirit. As for tapas, the word has been much debated and tossed around to describe all kinds of things. Here at Pamplona, our recipes follow the classic small bites served in bars throughout Spain to accompany wine or other beverages, a mainstay of Spanish culture enjoyed by everyone from dignitaries and celebrities to office workers and mechanics. We are excited to share our dream with the beautiful international city of Las Vegas.
