The sushi chef for Yamagata is Isami-San known as Sammy to his American customers. My husband has known him for 30 years. First at a Japanese restaurant in the East Village.I have only known my husband for 22 years. I have now been to 2 restaurants where Isami San worked. For Japanese, sushi is an art but also a life style.Isami San is a talented chef and the owner of this restaurant is Korean and though he does not make the sushi it seems the owner picked it.Since Isami San is from Japan and an experienced sushi chef , the owner would be wise to have him chose the fish. The fish did not seem up to Isami’s usual standard but my husband said the Uni was outstanding!His talent is being under utilized. If he is not picking the fish he should be. If he did pick the fish he was not given the proper budget for the prices they charge.I had Soba the Soba was good. The restaurant is clean.We will be back to see Isami San and his assistant sushi chef but disappointed in the sushi a bit. We are hoping the sushi improves when we go back.
