Fresh. We have been to Salute a few times and each time I walk away with the same impression. The menu itself is fantastic with tons of creative combinations of ingredients. This most recent visit we ordered an appetizer consisting of a crostini with figs, blood orange and a hard pungent cheese (grana padano). It was out of this world. We also ordered a crostini with lump crab and avocado. My son loved it. He ordered a seafood dish that is served in a stew like broth which had lobster, shrimp, clams, mussels with lots of garlic, and he took home what he couldn’t eat. My wife ordered a tagliolini. Spaghetti with cherry or grape tomatoes, speck (bacon) lump crab and mascarpone. I ended up finishing hers. She raved that it was light yet delicious. I ordered the arctic char that was crusted in an herb crust with shaved asparagus salad on top and the fish was set over a sunchoke puree. It was fantastic. The fish was done perfectly so it flaked, was moist, the crust, which I typically don’t like was nice, subtle and did not overpower the char. The shaved asparagus salad was a nice light touch and I only wished there was more. The puree sunchoke was really nice and refreshing and a perfect compliment to the fish. Often you might see risotto sitting underneath which would have been way too heavy. This was perfect. The service was awesome. Our servers were knowledgable and genuinely interested in what we thought of our food as well as extremely friendly. The thing that really sits with me though is how fresh all the ingredients are. Almost as though there is a farm out back where all this stuff is grown. We had actually gotten to the restaurant with all of us in bad moods. As soon as we were halfway done with the appetizers, we were all smiling. Great food and will definitely be back.
