    Mediocre food and totally not Japanese.. Just not that good. We were sooooo disappointed as we were hoping for some authentic Japanese food. Not only wasn’t it very Japanese (peanut sauce?) but it wasn’t even good.

    A Special Place. We have been following Chef Kim Mller on her food odyssey since she was cooking inspired Northern New Mexico classics at the Galisteo Inn, through her creative approach to New American cuisine at Real Food Nation. Now she is working her magic on Japanese small plates, and if it is possible she has hit an even higher mark.The drive to Ten Thousand Waves is beautiful, and the setting for the restaurant is outstanding. The walk up the lighted path can be a little challenging to older folks, but there is handicap parking at the restaurant door. The restaurant itself is beautiful with waterfalls, understated but elegant Japanese decorations, and gorgeous views of the sub-Alpine terrain of Hyde Park Road. The food, though, is the star. We had the special chilled soup, which was a bit spicy but delicious. Kinpura gobo – burdock root and carrot with sesame soy dressing was a standout. It was so inviting and so delicious that I forgot to take an image. I liked the flavor of the yaki onigiri, although the large triangles were a little hard to handle with just chopsticks. Another standout was butakushi pork belly with a ginger barbeque sauce, crispy but unctuous at the same time. The black garlic aioli was tasty.Our server at first seemed a little distracted, but he soon warmed up and paid good attention to us without being intrusive. He also knew the menu, and if he didn’t know the answers to our questions – like the sources of the burdock root and black garlic – he found out and reported back to us. The only downside was the wait staff in general, who were obviously having a good time. They could be a bit more professional. Still, this is one of the best dining experiences in Santa Fe, and the small plates let you try lots of things without breaking the bank.

    The REAL Japanese experience. This is without exception the best Japanese restaurant in Santa Fe, probably in the entire state, hands down. I moved here from NYC, where there are some spectacular high-end authentic places to eat and have also visited Japan several times. What passes for Japanese cooking in Santa Fe, and most of the USA, is mediocre at best. But HERE you get the real thing, both in terms of ambiance, which is fabulous–what a setting!, and in terms of the food and drink. I cannot recommend it highly enough–although be warned, the first time around it’s a bit difficult to find, but well worth it! I say without hesitation, GO!!
