1 PM is a little late for a buffet……. But it looked pretty good and I’d been to the one in Salem several times and really liked it. (Not so their menu items however.)I had Chicken Enchilada, Rice, Beans, Cooked Vegetables (a little past their prime on the steam table at this hour) and both Chicken and Steak Fajitas fillings. I also snagged one of those fiery roasted Chilies to nibble with my Fajitas. (Unlike the Salem store, the Flour Tortillas were store-bought and not hecho a mano, unfortunately. In Salem a lady makes them on the griddle right in front of you.) Chips, Salsa and Bean Dip were on my table when I returned to it.The restaurant is decorated in colorfully garish ceramic tile, brick and brightly painted stucco. The booths are spacious and comfortable. Grisela, my hostess and server was cheerful and friendly.It was a hearty and delicious lunch for a very reasonable $7.25 (Pre-gratuity).Good Mexican places seem to come and go in Independence. This one’s been there for awhile. It qualifies as a good one with staying power.If you find yourself in Independence and hungry, I recommend this place.
