    My friend and I intended to visit the nearby Thai Lotus but with nobody on-site 15 min. after their posted opening time we have up and walked over to Kolby’s. This was my first visit and I was impressed. I ordered the 9-ball burger, which is the house standard 1/3 lb burger topped with 2 pieces of bacon and your choice of cheese (I chose Swiss) on a kaiser bun. The burger comes with kettle chips, although you can pay extra and have other potato products or salad (I stayed with the chips). This was a very good burger; there were no flashy toppings or sauces but sometimes that’s exactly what I want. The service here was fast and friendly – this was a good lunch experience.

    The subjects of all my 8/3/12 criticisms have been fixed!. At first blush, it would seem an unlikely spot for a terrific Steak Dinner, but do not be fooled. It has the look of a dive bar pool hall and there’s a good chance you’ll have to suffer some country western music on the juke box, but SWMBO and I had meals here tonight that belie that first impression.Carol had a Rib-Eye with Brown Rice Pilaf and Tortilla Soup. I had a T-Bone with a Dinner Roll, Brown Rice Pilaf and Seasonal Veggies. Both Steaks were perfectly Medium Rare and the Pilaf was buttery and delicious. Her Soup, which we shared, was beautifully presented with Tortilla Strips and a Sour Cream drizzle floating on the spicy Chili-like surface with big chunks of Beefy goodness. My Veggies were sauteed Onion, Red and Green Bell Peppers and Zucchini Squash. Our servers, Danny and Matt, were both at the top of their game.These meals were as fine as we’d had lately and the bill topped out at just $32 (before gratuity) including Carol’s Beer. Word is their Seafood and Chicken dishes are just as good. They’ve also got an interesting Breakfast menu which starts at 9 AM on Saturdays and Sundays.I’m really glad to see this place got the newbie kinks out of their rope.Give Kolby’s a try. The food and service are now top notch! And tell ’em Chuck sent you.03 Aug, 2012I had a quiver full………… Of service criticisms and a target at which to launch my barbed arrows until I figured out that this was Kolby’s first day open and, very likely, my server’s first day as a server. He seemed like a nice enough guy, but he has a great deal to learn. So rather than go into a lengthy rant, I’ll give you a brief precis of my experience. I’ll also reserve my vote until such time as they’ve had time to figure out some very basic stuff and I’ve tried the place again.1:30 PM: Entered and seated myself.1:41 PM: Got my initial greeting and was asked if I wanted a menu.1:51 PM: Received menu.2:00 PM: My order was taken.2:19 PM: Food was presented.2:34 PM: Finished meal. Pushed plate away.2:37 PM: Server took plate and asked me if I wanted Ice Water. (First offer of a drink of any kind.)2:49 PM: Paid and leftGranted, my server/bartender seemed to be working the room alone. As you can see the time lapses were inordinately long. There were a handful of other patrons. Several basic server skills were absent. I’m not going to work the guy over too hard because I think he’s a newbie and the place should be given time to work out the inevitable bugs, which must be given time to discover and correct, in any new business. I’ll give ’em a month or two to get the kinks out. Hopefully they will. Otherwise, man the forward torpedo tubes!I had a 9 Ball Burger which my server explained is a Lean, Fresh Ground 1/3 pound Patty Bacon Cheese (I chose Swiss) Burger with Waffle Fries. (Their Blue Burger is made with Blue Cheese Dressing, always a poorly advised economy.) The Burger was good. The Swiss Cheese was real. It came with Lettuce and Tomato. The Waffle Fries were also good. They do not have Malt Vinegar. Their Ketchup was Hunts which can be forgiven for its lack of High Fructose Corn Syrup, although in a Pub scenario, this hardly seems a likely justification.I wish the owners well. I hope they get their act together soon. The menu looks pretty ambitious for a Sports Bar/Pool Room. But if it’s all as good as my Burger was today, the place is going to be worthy of further study.Note: They do not accept American Express.Stay tuned more to come!
