Elegant and casual dining at the Heathman hotel. Great place to go before visiting the Schnitz. I went for lunch and had the crab Luis salad. Wait staff made feel so important, I loved it. My dining partner said the happy hour was great too, especially the oysters.

I used to enjoy the Heathman restaurant, particularly their weekend brunch. That closed down and in its place now sits Headwaters. The space was renovated before opening. Most of the changes are in the bar area. If you never sat at the bar, the restaurant will look the same to you.Unfortunately, the quality of the food has dropped substantially. The ingredients are still of good quality, but the cooks don’t know what to do with them. I stayed at the hotel for about a week and dined three times here…all with the same dreadful result, bad food. Their omelet was dry and was practically flavorless. The pasta dish I ordered had twice the amount of sauce it should have had. The fries were soggy. The only think we liked was a crab cake. The service was all over the place. During breakfast, I was outnumbered three-to-one, yet I had to flag down different personnel to get more juice and another time to get my check. On one ocassion, I sat myself down after waiting several minutes for the greeter. I’m not sure what she was doing. Another time, a server handed me a plate and it almost spilled. He neglected to mention the plate was hot! They used to have a good selection of wine by the glass. That’s no longer the case. To the new management, fix your issues or you’ll lose business fast.
