    A diamond unknown to most…… Outside the hallowed halls of Corban University, this sparkling cafeteria, with a valley view, offers a rotating and respectable selection of hearty fare: build-your-own or pre-tossed Salads, cold Sandwich Fixin’s, custom crafted Burgers, four varieties of Pizza, Roast Chicken Breasts, three Pasta and Sauce choices, an array of Vegetables, fresh Fruit and several Dessert options. In a phrase; something for just about everyone. It’s a far cry from the take-it-or-leave-it college cafeterias many of us remember.Today I was the guest of Professor Tennant, a gracious lady and a charming lunch companion. We both had the nicely seasoned Chicken Breasts. She created a crisp Salad from the bar and selected a fresh Pear for dessert. I had Fettuccine with Marinara Sauce, Caesar Salad and a Cake over Custard dessert topped with Whipped Cream and Chocolate Chips. (Probably not the healthiest finale, but it sure was good!)I first discovered this gem last September. Before trying it, I made sure the public was welcome and was assured this is the case. If you’d like to enjoy a good and economical (it was $6 in Sept.) lunch, among some of the brightest and friendliest young scholars you’ll ever have the pleasure to meet, Trask Memorial Dining Hall is worthy of your attention.27 Sep, 2012I have a list of secret places.. Places that are little known and/or hidden away in unlikely spots.Having been scrounging for new eateries to try and being out of local fodder, I was noodling on-line and chanced upon this gem. I contacted the concessionaire and discovered that the public is indeed welcome in this private Christian University dining room.The dining room is crisp and clean and affords a panoramic view of Salem and the surrounding valley.It’s cafeteria style dining. One price fits all! $6.00 for lunch and take what you want. Hot dishes, Burgers, Pizza, Sandwiches, Salad Bar and various Desserts. Admittedly, this is not haute cuisine. What it is is good hearty nutritious fare. I had Salisbury Steak with Red Skins-in Mashers, Lemon Pepper Chicken, Yellow Curry Rice w/julienned Carrots and Cabbage and a Heel of WW Bread with a Diet Pepsi and topped it off with a Yellow Cupcake with Chocolate Frosting drizzled with Honey. You bus your own tables and scrape your own plates.I consider this a find well worth the effort to ferret out.
