Food Cart-cum-Produce Stand. What a perfect Lunch spot on this beautiful summer solstice. It was a treat on several levels, not the least of which was running into my young friend Brian Greggs whom I met a couple of years ago when he was launching a campus newspaper at Willamette University. He’s now employed at this interesting enterprise. I also met the gracious young Elizabeth Miller who in concert with her husband launched Minto Island Growers Farm Food Cart.Adjacent to the Cart is a slab patio covered with a canvas awning where hardwood picnic tables accommodate the lunch bunch. Fresh picked Oregon Strawberries and other produce harvested from their farm are also available. I couldn’t resist the Strawberries and also snapped up a bunch of Garlic Scapes which, as Elizabeth explained to me, are the flower stalks of the Garlic. They are usually cut so the plant can concentrate its strength into the growth of the bulb. The window of opportunity to enjoy these interesting greens is short and a once a year event. So if youd like to try some, now is the time.Brian also gave me an abbreviated run-down on their wood-fired Pizza oven. Id seen them before, of course, but never inspected one closely. This one functions with the wood fire on the same level and in the same enclosure in which the Pizza is baked. Constant turning is required to assure even Crust browning. A good time to check it out will be Friday (6/22/12) when they will extend their regular hours to 9:30 PM for their Farm-To-Pizza Night event. I understand they will be pouring some good local brews also.Today I had their Cubano Pork Sandwich; marinated, slow cooked Pork with caramelized Onions on and a Cascade Bakery Ciabatta/English Muffin-like Bun. It came with a Spinach and Strawberry Salad with grated Parmesan Cheese and a light Strawberry Vinaigrette Dressing. I washed it all down with Lemon-Orange-Mint Seltzer over ice. It was a nice, light and refreshing Lunch. On a day like this, what more could a guy ask?
