Perfectly good food by Brazilian steakhouse standards. Relatively flavorful on most of the meat selections, well seasoned and nicely cooked to produce a little crispness on the outside and juiciness on the inside. The restaurant itself is sleek and modern, with most of the interior design elements remaining from Robert Irvine’s Eat, which formerly occupied this space. Has a very upscale Vegas feel, unlike almost any restaurant you’ll find on Hilton Head. Unique chandeliers, rich wood tone tables and walls, an eye-catching bar area, an overall spacious feel, and very cool restrooms make Cowboy one of the more attractive restaurant interiors on the island. Two negative observations on our visit: first, the buffet portion of the meal (which consists of a cold salad bar and a hot food area) is pretty lackluster, and really not very Brazilian. While it has some nice selections (like smoked salmon and chilled shrimp), the only remotely South American inclusions are plain (steamed) white rice and black beans. More American side dishes like mashed potatoes and sauted mushrooms are included instead of more traditional Brazilian steakhouse items like fried plantains.Second, a pet peeve of mine, we came on a quiet night in the off season where the dining room was almost completely empty. However, we were seated right next to one of the only other tables in the restaurant. Despite probably 20 or 30 wide open available tables, we were stuck in an alcove at a 2-top directly beside another couple who had also just sat down. I get that this might make things very marginally easier for the staff of meat bringers, but this is just really a poor service element that made the meal more awkward for people at both tables. When a restaurant has a spacious and attractive dining room, it should use it to full advantage. At $38.50, this is a pricy meal by island standards but pretty on par with similar restaurants elsewhere. Well worth it if you have a big appetite.
