A little more smoke. I think Bill’s gave up their pit a while back. The pork is still among the best but it lacks a little depth of flavor. Its not only the wood smoke that’s different, but the smoke from the fat that burns off on the hickory, it all conspires to produce superior Barbecue. when the switch is made to gas or electric cookers even though they add smoke…there is just a little something different. Still good and soon we won’t remember how good the pit smoked was. Time marches on.
