Hillbilly Butts and Brisket BBQ started out as a little BBQ trailer by Pat and Lewis Carsten (Mama & Pops) as a means to survive after their retirement. Their passion is and always has been excellent BBQ, family, and friends, and this little rig allows us all of those pleasures. Pops has been smoking meat for 50 years, and he's known for his delicious tender juicy pulled pork, his mouthwatering flavorful brisket, and his huge, perfectly cooked racks of ribs and smoked chickens. This is something we have put our heart and soul into and our Lord & Savior be our guide. We get our meat the night before every day we open (yup, we shop EVERY day for fresh cuts of the best local meats, so fresh and never frozen) and we start the smoking process arount 8 pm and smoke for 14 hours straight (you will smell the smoke and see us bundled up around the smoker all throughout the night....Thank you for all those 3 am honks and waves and visitors that help keep us awake and encouraged) about 8am, mama and pops start chopping fresh produce for their homemade potato salad and slaw. From the 2 lb BBQ Stuffed Taters, kids meals, sandwhiches and plates....We offer something fresh and delicious for every appetite!
