    We went to Rosarito’s last night for dinner and even tough they were really busy all the staff were really professional and engaging with us. My son really loved the creamy jalapeno dip they serve with the chips and the salsa, also it was great that along with chips and salsa they serve a small tray with carrots and celery (the wife loved this). Food took about 8 minutes to get to the table after we order and we were a party of 12! Fajitas came pipping hot and sizzling. We loved the atmosphere, it looks like an upscale restaurant but the prices are not. The only bad thing was that we got there after happy hour ended. We welcome Rosarito’s to Knoxville!

    12/26/15 – There’s been numerous restaurants give it a go at this location, but none of them have made it. I hoped Rosarito’s would be different.We went there for a late lunch–we had a wild mixture of Mexican fare. I had the Tacos Al Carbon, which came with pico, rice and charro beans. We also tried the Deluxe Queso (basically taco meat and pico in cheese). The chips and salsa came with an additional white salsa, carrots and celery.The salsa is smoky and hot–very good. The charro beans are wonderfully flavored. The sweet iced tea is awesome. Everything else really missed the mark–I hoped this Mexican restaurant would really be good, but we don’t think Rosarito’s will be open very long because the service was much better than the food.
