Souper solid. Forgive the awful pun, but frankly, this place made me a bit giddy. It has literally been years since I have had fit-for-entree soup that I have liked in a restaurant. Pho Bistro not only delivered decent pho, but the complete hole-in-the-wall experience.One must begin by speaking of the drinks, because they deliver all of the Vietnamese standards, from the salty fruit beverages to coconut water to the egg yolk soda that I drank. I must echo the other reviews and say the spring rolls were dead-on, with perfectly textured rice paper, perfectly cooked vermicelli and well-balanced peanut sauce. Pho was different (purists be wary), but I loved it. The broth was not very stocky, which takes away a bit of savoriness, but this is counterbalanced well by the perfect use of salt, the heap of noodles and the lack of grease. Added a dash of sriracha and it was perfect. The lightly fried extra-firm tofu took on a paneer-like consistency that was nice and filling without feeling as if it were weighing you down. They were generous with the fixin’s, and each basil leaf, sprout, lime wedge and jalapeo was clean and presentable.Seating area was clean, and I admit I have a soft spot for restaurants that have an extended family hanging around. Makes you feel like a welcome guest at their home, and that is exactly how we were treated. Pho Bistro is inexpensive and a fine choice any day of the week.
