The best thing about Billy’s BBQ is Billy and the BBQ. The Q is definitely depictive of traditional south Texas BBQ with beans, rice, and the best potato salad. Billy doesn’t have much to say other than what can he get and how much it will be. But he does it all. Except the rice. His mom or his sister cook it everyday. The best kept secret are the beef ribs at 11:50-12:00 pm. That is the time where the temp is perfect, the taste is all there, and you actually have to bite the meat off the bone. So it doesn’t taste like barbacoa.
Always Great!. I have been eating at Billy’s for the past 10 years and I absolutely love not only the food but that the owner actually serves his customer’s. The meat is always tender, full of flavor and extremely moist, not to mention the barbeque sauce is home made too! It’s quaint and cozy. I’ve taken barbeque lovers and they all agree that Billy’s is better than the fast food chains and larger restaurants here.
Don’t do it.. As I walked in my initial impression was confusion. As you approach the counter it is unclear whether you take a seat or order at the counter. When I got my food the BBQ was tough and lacking in flavor. The definition of BBQ is low and slow, cooked with indirect heat. This brisket tasted as though it was braised in the oven with water in the pan. Thats as far as I am going to elaborate, suffice it to say, I will not return.
