    A big big big thumbs up. Recommended.Let’s talk about coffee. As you know, this is one of my passions. I live in Houston, within a few miles of some spectacularly good coffee shops. Artisan. Premises roasting.Well, the owner on Causeway Cafe is passionate about coffee in the same way. He isn’t roasting himself. But he has opted for bringing in Java Pura coffee from Houston. An excellent choice. Java Pura does very good coffee. Like all the others, they roast to the best bean profile and do not over roast to a dark color, losing all the potential of the coffee flavor (cough * Starbucks * cough).We talked about water and the importance of water with the right mineral profile to add in the extraction of the coffee, to maximize the flavor. When he moved into the building he discovered the that piping underneath was ancient. He installed an RO system to completely bring the water back to baseline as the local water had some undesirable contaminants in it. Not doing this would result in a shortened life for any espresso boilers or coffee makers.Then, he researched and added back in the correct mineral profile for his water. I know from my friendships with the coffee guys here in Houston that most of them do this also. RO first to have clean, uncontaminated water. Then, a packet of the right mix of minerals to enhance the coffee flavor.On Padre Island, in the hotels, restaurants, etc. there are people using RO water for their coffee making without understanding how critical the right mineral composition can be.
