I tend to judge Italian places by their chicken parm. It’s an easy dish to screw up and difficult to hide a chef’s shortcomings. Fortunately the good folks at Roma know their way around a chicken breast. No grainy, mealy, mystery meat here – the chicken was light and tender in a perfect coating of Italian bread crumbs fried to perfection. The chicken was topped with a savory marinara, sprinkled with mozzarella and into the pizza oven to bake to perfection. The dish is paired with al dente spaghetti – Roma uses a thin spaghettini that I’m not normally a fan of but it pairs so well with their sauce I didn’t mind the thinner noodle. It was a bit odd that the pasta came dry but the chicken came on a bed of sauce and each table starts with a basket of heavenly rolls and a cup of red sauce so there was plenty to go around. If this place has any shortcomings it is that it is an older building and the owners really need to reinvest money on the interior and decor. Perhaps Robert Irvine or one of those Food Network guys could come do a makeover show for these guys? The food certainly doesn’t need any help.
