Curly Talmage (Curly T), a cutting horse trainer, was a tough old marine, hardened on Iwo Jima, and loved to eat the beef he helped Texas ranchers produce. This smoked brisket takes 4 days to prepare but, unlike Curly, is fabulously tender. Curly T's also has a wide selection of cured pork, beef, sausages, gourmet cheeses and artisan breads.
