Divine is the first word that comes to mind. Then perfection, which is redundant. Who knew, hidden away in St George UT, a chef who seasons the ahi, warms it but doesn’t cook, so it melts in your mouth! The appetizer of little picuo peppers stuffed with porcino mushrooms & goat cheese, on top of a generous smear of smoky guajillo pepper sauce, was a perfect blend of flavors and textures. Julie was also perfection. Her timing was impeccable. She approached me with a beautiful smile, she knew her menu, the ingredients, her wines. Even more than that, all her responses, her comportment, was friendly, yet genteel . Honestly, I got a little glassy eyed, everything was so perfect, so beautiful. After a six week vaca, visiting 6 states, including Hawaii, I get perfection at The Painted Pony in St George UT.
