Whenever this truck is scheduled to be at the office I always hit it up. Love the fresh pizza and getting charred flour on my fingers as I feast. Simple toppings, as it should be for a high-heat quick baking variety such as this, but always delicious.
The look of the truck is very unique and that just adds to the food. You can actually look through to the inside where their oven is and it’s awesome to see those pretty pizzas coming in and out. I ordered the Bianco Pizza made with ricotta, fresh mozzarella, basil and olive oil. Added a dash of red pepper flakes too. The crust was good (a little charred like wood-fired pizza usually is) but a tasty pizza overall. It wasn’t too long to get our food either.
The pizza from Fiore is fantastic. Their attention to detail is amazing. It is by far the best wood fire pizza around. If you see the truck, it is a must to give it a try.
Cool truck, good pizza. I first tried these guys at the Provo Farmers’ Market last year. The oven was just mounted on a trailer at the time, and they were clearly still working the kinks out of the system. They had a number of operational and quality issues (to be fair, they were swamped with customers), so I left with a bad first impression.However, I saw their new truck at the Market last month. Cool design. Instead of the cramped white van-type truck, they went with a modified cargo container on the back of a medium truck. One side is open, with a pit for the cashier to stand in, so she’s at ground level. The oven is mounted in the back, with prep areas along one side. Smart setup. The only obvious changes would be better signage and menu boards. They need a larger logo on the side, and the menu had limited info. Some items weren’t listed, and the sizing wasn’t clear. They should show the two available sizes, so the cashier doesn’t have to explain to each person in turn that there are two sizes, and hold up her hands to show how big they are.Now, to the pizza. We caught the truck in AF, and tried a margherita (mozzarella, tomato, basil, and olive oil), and a New York (ricotta, mozzarella, tomato, pepperoni, and sausage). The crust was perfect NY-style thin crust. Thin, wheaty, crispy-chewy, and just a few char marks. They’ve definitely sorted out their earlier cooking issues. The margherita had a great flavor. The tomatoes were either fresh ripe tomatoes, or a high quality Pomi-style product. No canned tomato taste. I was a little skeptical when I saw that they cooked the basil leaves, but they had great flavor and no burnt taste. The New York was also good. The sausage was pretty flavorful. I wasn’t totally crazy about the cheese, though. It was a bit too greasy and tough, and detracted from the quality of the crust and the tomatoes. My $0.02.We got there just before the huge line formed, so that was lucky.Still, pretty impressive stuff. This is close to getting on my favorite list.
