I tried the red curry with chicken. It was bland and some parts of it were overcooked while others were undercooked. I may give this truck another chance but I wouldn’t order curry again unless I hear that it’s been improved.I was expecting a bunch of soupy curry but didn’t get much of it; it was treated more like a sauce for the chicken. It was edible even though I had several other major issues with it. The chicken was overcooked, dry, and tough. The Thai eggplant was severely undercooked and fibrous. The entire dish was under seasoned. The coconut milk came through but I could only detect hints of curry paste. There was a conspicuous lack of heat overall.
