Good Sandwiches, Good Deal. Bellingham Flat Bread & Bakery is at the corner of Cornwall and Alabama, not exactly a hub of culinary activity in the city. Ive passed it a million times without even thinking about it until I recently realized that they also offer takeout sandwiches and soup. The menu looked interesting, so we gave it a try. We shared the bean and bacon soup, which was really good. My wifes sandwich was the Peter Rabbit (all kinds of vegetables with cheese, pesto mayo, hard boiled eggs and bacon added on). She liked it a lot. I got the spicy beef (roast beef, pastrami, mayo, horseradish, Dijon mustard and pepper jack cheese plus lots of vegetables). Again, it was very good. The sandwiches were substantial. My wife actually ate hers with a knife and fork because it just fell apart when she tried to pick it up. It probably would be better to serve these things on rolls rather than sliced bread. All this food was only $15. My only regret was that I didnt get a hot sandwich (its not clear if they even offer them). It would have paired very well with that bean soup on a cold and stormy night.BTW, with all that bread baking, the place smells great, and the staff is super friendly.
