We’re making hand crafted bagels through traditional and methods with some twists. Using a sour dough starter to build our dough, we hand form and long ferment our bagels for a deeper taste. We then boil in a highly diluted solution of Lye, and bake on a stone hearth. Currently (until we open our brick and mortar location in spring of 2020) we sell our bagels at Cafe Cortina, located in the second floor lobby of Two Union Square building in downtown Seattle. You can order online to reserve your bagels or drop in.
