    Wonderful Senegal!. I remember when I lived in Denver that I was under the firm belief that I was around a great deal of culinary diversity. And coming from Wyoming I was. Then I would come across individuals balking at the lack of diversity that the city had. Almost all of these individuals were from the East or West Coast. Usually the ones that were the meanest about it were from the East. So I became aware that there was other kinds of food to try in a short period of time and I would have to go to either coast to experience it since Denver did not have as much culinary diversity as I thought.Upon moving to Washington I was excited to experience this coastal diversity. One kind of food that I was convinced Denver did not have was Senegalese food. So when we were driving around Columbia City I got very excited to try a new ethnic cuisine I never had before!Upon entering the place we were warmly greeted by a gentleman running the register and taking orders. The restaurant space is very small. About four or five tables, which tend to fill up very quickly! We decided to make our meal a carry out order and dine in a nearby park. Let it be said though, often times the tiniest restaurants are often times the best!Since Senegalese Cuisine was new to both Steve and myself we decided to try a couple of different things. As an appetizer we got the Veggie Fataya which was pastries stuffed with seasoned veggies with a red dipping sauce. They were delicious!For my entree I got the Chicken Brochette which was seasoned and grilled chicken on skewers with onion and bell peppers. It also came with a salad. The skewers were to die for! I simply loved them and could easily fall into a groove of getting them everytime I would come back here! The accompanied salad was very fresh and had a light oily dressing which was wonderful!To drink I got ginger juice which was great! If you are a ginger lover then you got to get it! Like anything with a good amount of ginger it gives you a slow burn so sipping the juice drink is better and makes it more enjoyable! We also got the Bouye Juice which is from the Baobab tree. It is refreshing, different and almost has a minty aftertaste to it.I can’t recall exactly what Steve got to eat but I believe it was a lamb dish with veggies and jasmine rice. It too was delicious and could easily break me out of that chicken skewer groove.La Teranga is indeed a great place! The food is tailored to tastes of Americans so it is not too polarizing but has enough of a ethnic touch that makes you realize you are eating something different. I often have a circle of types of restaurants I usually go to Mexican, various kinds of Asian restaurants and American style restaurants. Occasionally I go to the Indian, Greek and Ethiopian restaurant and while there are a large range of entrees and recipes to try with all these types of food it is refreshing sometimes to have something completely different! I consider La Teranga one of these places, it was a refreshing experience indeed!
