    Its the best kind of soup Ive ever had, the Vietnamese equivalent of chicken noodle soup. Its also one of, if not the most filling meals Ive ever had.In the Lincoln district of Tacoma, Washington is a small corner restraint called Vien Dong. It serves up Vietnamese and Asian cuisine in an area ripe with competition. Its also a bit unsuspecting, like a lot of places in the area as the district is old and decaying. But dont let that fool you, as the good is great and will be a center piece once the urban renewal project finishes giving the area a facelift.What I ordered was a bowl of pho, with rare & well-done beef, flank, tripe, meatballs. Served with rice noodles in a delicious stock, that I believe is beef based. It took about ten minutes to get my food, which I did take home to eat. I should note it only takes me about five minutes to walk over to Vien Dong, so theres no real wait.The pho, as it should be, was hot enough to cook the portion of beef that was raw, which is how its supposed to be. The rice noodles absorbed all the flavors, from the beef, broth, and the onions, basil, chives, and chili oil.I typically order extra noodles, as I love noodles in general. But some pho places dont give me enough noodles, and this one is one of them. This does lead to me being beyond full, but once youve eaten everything youre left with a bowl of warm and hearty broth that you cant just pour down the sink, you have to drink it.They also have a delicious chili oil, thats a bit chunky, which is different than Im used to. However, it is jammed packed with more flavor than any other chili oil that Ive had, even my sad attempts at making it myself.Id also like to note that the service there is always fast, and the folks who run this restaurant are always friendly. They know me, and what I order and that I love their chili oil so they always include two or three cups of chili oil.All in all Vien Dong is some of the best pho Ive ever had. Id highly recommend it to any and everyone who likes pho, or just wants to give it a try.
