Whatcom County is not exactly famous for its vast variety of ethnic restaurants, so imagine my surprise when I found out that there is a new Cuban food truck in the area, and it sets up a couple of times a week for lunch a mere five or so miles from my front door. We didnt waste much time getting there. My wife and I shared the Cubano sandwich (slow roasted pork shoulder, cured ham, Swiss cheese, yellow mustard and dill pickles on pressed Cuban bread). It was tasty. I had the Lechon Asada Bowl (slow roasted, citrus/garlic marinated pork shoulder) while my wife tried the Picadillo Bowl (ground beef hash cooked with Spanish olives, cherry tomatoes, golden raisins and spices). We both liked our choices. The bowls came with Cuban slaw (excellent), black beans (pretty good) and some uninteresting sticky Cuban rice. Their menu and locations are on their web site, cubanocubano.com. Overall, this is a really nice addition to the local food scene.
