    Affordable, specialized, great food.. We heard about the Dumpling Haus (which is a strange name, given that it’s Chinese) last year while visiting Madison. All in all, we ended up going there three times during the week. The chef/owner used to own a full restaurant, but got tired of all the business and just wanted to concentrate on a few things: dumplings, bao zi, and noodle bowls. The menu changes daily (though some things are constant), and it’s always posted on a chalk board (though in fairness, it seldom changes over time). It’s family owned and run, in a fairly small mall space that’s packed come lunch time.The dumplings are great, with fresh ingredients and very varied flavors. We were never disappointed there, and intend to go back again when we return to Madison in early summer.EDIT: Been there again. Enjoyed it as much. The mall itself gives every appearance of dying in its indoor area (though the outside shops are flourishing). Dumpling Haus remains a great favorite.

    Liked their previous place much better….. The owners of this restaurant used to own and operate the Chinese restaurant, Yen Ching on Midvale Blvd. That was one of the best two Chinese restaurants in town. The other was hong kong wok in Hilldale mall. Sadly – both are now out of business.The new restaurant is good – but I think too pricey for what you get. Try them out – the food is good – just don’t be surprised at the cost when you get there.

    Sesame Noodles w/a Kick. Dumpling Haus @.Hilldale is another restaurant that was recommended to me that I had yet to try even though I am often in the Hilldale area, but I am not huge on dumplings & had read on other reviews that you may not get your $$$ worth with the dumpling portion served here. I was pleasantly surprised to see a large variety of noodle dishes on the menu. I stopped on a Tues late afternoon and because I am more of a late diner, I got my order to go. Being vegetarian I went with the Sesame Noodle Kick which is Szechuan style noodles with Spicy Sesame Sauce, Green Onions, Cilantro & Peanuts. I was a bit disappointed that the woman who took my order, who I believe is one of the owners, was playing with her I-Pad and through the entire exchange with me never took her one hand off of it, pretty much ignoring her paying customer, but she did have the ability to multi-task as she did give me proper change. My order only took a few minutes, but instead of just placing the fairly hot styrofoam container in a bag for me, I was asked if I wanted a bag, which seemed like a no brainier since it was so hot. The dish itself was outstanding, although the one ingredient that seemed to be lacking was the amount of peanuts, fairly non-existent. The only other negative was the dish came with one of those small dressing cup containers of the Spicy Sauce, but they only filled the container about 1/3 full, so it probably wasn’t’ even a teaspoon of sauce, and the sauce was really good, so it would have added even more flavor. The amount of noodles was just the right amount to fill me up, so I would say the $8 charge is worth it on this dish. There are a few other vegetarian noodle dishes on the menu, so looking forward to trying the Peanut Glazed Noodle bowl next visit.

    Good dumplings. Not filling enough, and I east dumplings regularly. We had to get more food afterwards. Really casual setting, tables close together.

    Horrible food, sauce taste like any other soy sauce. Too expensive for what it was given.

    I was in the restaurant based on the great reviews that were posted. I tried out 3 different flavors of dumplings. The dough was sticky and the filling was garlicky. They were expansive for three little dumplings.
