  I heart Carl. My husband and I got married last summer in June in Madison, WI. We were planning our wedding while I was finishing my last semester in Eau Claire, WI – which was a challenge being 4 hours away from Madison. So, when we made appointments to meet with vendors we had to do our homework beforehand. I asked around and searched the internet and everyone I asked and every website I checked out mentioned Carl’s Cakes. When it came time to try cakes we decided to make an appointment with Carl, in fact, this was the only place we made an appointment to try cakes. Needless to say, we didn’t need to go anywhere else and we signed a contract that day. Carl was very friendly and had many samples for us to try. The cake is AMAZING!!! Seriously – birthdays, weddings, whatever – get a cake from Carl. Now, we wanted a very simple wedding cake design-wise. We did see some elaborate cakes while we were at the diner, but if you go with Carl don’t expect a Martha Stewart kind of cake. He uses buttercream which is out of this world – not too sweet and a great consistency, but that means decorating is different than what you see in most wedding magazines. The only bad reviews I have read have been about the decorating and I think that’s because people expect what they see in magazines. Buttercream is different and you should choose a design that will work with buttercream. As for the cake – I can’t even describe with words how good it is. At most weddings I’ve been to, I’ve always had slightly dried out almost stale wedding cake. We were so thrilled when we finally ate out wedding cake because not only was it fresh and moist but it was better than we remembered. We had a three-tiered cake. The topper and bottom were basic white sponge cake with raspberry filling – HOLY COW! My forever favorite. The middle section was just his basic white sponge cake with lemon filling which, totally blew my mind. All of it was frosted with basic white buttercream with little white sugar flowers which, he was so helpful in finding for us. I couldn’t have been happier with out it turned out and I had SOOOO many compliments on the cake. Other delightful flavors we tried were chocolate sponge cake with apricot filling and hazelnut buttercream, chocolate sponge cake with raspberry filling, as well as a chocolate sponge cake with mint filling. These are the ones that stand out in my mind at least. Seriously, if you live in Madison – just get your cakes from Carl. A man who tells me I’m going to age well and makes amazing cakes is okay in my book :)One last thing – the pricing was very fare and much cheaper than what was expecting a wedding cake to cost. Carl was nice enough to suggest doing a smaller display cake and adding a full sheet considering I needed enough cake for 150-200 people. I have gotten two more cakes from him since then and was not disappointed in the least. The cake stays good for quite awhile if you keep it in the refrigerator. We ate wedding cake for days 🙂

  Do not get a wedding cake from Carl’s. This review is based only on the service, not the product. 1 week before our wedding Carl decides he can’t make the cake that we agreed on 5 months ago and tells us the flavors we had been sold on at the tasting were terrible and we should choose something else. Apparently, Carl lacks the designing skills he promised us when we signed a contract and paid a deposit. The worst experience of planning the entire wedding has come with Carl’s Cakes. Keep that in mind when you are shopping for a wedding cake. Wish we would have known this months ago, I suggest you book someone else. The cake itself is really good, he must have good workers and I don’t want to take anything away from them. It’s Carl, the actual decorator that you should avoid.

  Wedding bliss & professional advice. Carl’s cakes was so incredibly helpful in helping us plan our wedding. He has great advice on serving size, cake size, the popularity of flavors and how to get the most for our money. The cake was delivered to our venue on time,in perfect condition and it tasted GREAT!! Other cakes make you feel like you have just eaten a pile of heavy, greasy little Debbie snacks. Carl’s cakes are filling but light, sweet but not like the chemically processed sweet. Two thumbs way up from Laura Rose!
