Ingredients
- 1 cup (90g) rolled oats
- 1 cup (125g) plain flour
- 1 cup (220g) brown sugar
- 1 cup (85g) desiccated coconut
- 125g butter
- 2 tablespoons golden syrup
- 2 tablespoons water
- 1/2 teaspoon bicarbonate of soda
- Optional: chocolate chips or nuts for extra texture and flavor
Method
- Preheat your oven to 180°C (356°F).
- Grease and line a 3cm-deep, 19cm x 29cm (base) slice pan with baking paper, ensuring a 2cm overhang at the long ends.
- In a large bowl, mix together the rolled oats, plain flour, brown sugar, and desiccated coconut.
- In a small saucepan over low heat, melt the butter and golden syrup together, stirring until smooth. Remove from heat.
- Dissolve the bicarbonate of soda in 2 tablespoons of water and add it to the melted butter and syrup mixture.
- Pour the liquid ingredients into the dry ingredients, stirring thoroughly until everything is well combined. If desired, stir in chocolate chips or nuts at this stage.
- Press the mixture evenly into the prepared pan.
- Bake for 25-30 minutes, or until golden brown.
- Allow to cool in the pan before lifting out and cutting into squares.
