- Plain sweet biscuits, 200g (7 oz)
- Desiccated coconut, 1 cup (85g or 3 oz)
- Sweetened condensed milk, 395g (14 oz)
- Brown sugar, 100g (3.5 oz)
- Butter, 125g (4.4 oz)
- Golden syrup, 2 tablespoons (30ml)
- Cocoa powder, 2 tablespoons (15g or 0.5 oz)
- Dark chocolate, 150g (5.3 oz) for topping
- Extra butter, 2 teaspoons (10g or 0.35 oz) for topping
Method
- Crush the biscuits into fine pieces and mix them with the desiccated coconut in a large bowl.
- Melt 125g of butter in a saucepan over medium heat. Stir in the condensed milk and golden syrup until the mixture is smooth and well-combined.
- Gradually add the cocoa powder to the saucepan, continuously stirring to create a smooth caramel mixture.
- Pour the caramel mixture over the biscuit and coconut base, mixing well. Press the mixture firmly into a lined square baking tin.
- Melt the dark chocolate and extra butter together, either in the microwave or over a double boiler, and spread evenly over the caramel base.
- Chill in the refrigerator for at least 2 hours, or until the slice is set.
- Cut into 16 squares and serve.
