  • Green bell pepper, 1, sliced
  • Light soy sauce, 3 tablespoons (45ml)
  • Cornstarch, 2 tablespoons (30g)
  • Sugar, 1 teaspoon (4g)
  • Black pepper, 1/2 teaspoon (2g)
  • Vegetable oil, 2 tablespoons (30ml)
  • Oyster sauce, 2 tablespoons (30ml)
  • Shaoxing wine, 2 tablespoons (30ml)
  • Water, 1/2 cup (120ml)

Method

  • Begin by slicing the chicken breasts into bite-sized pieces. In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, the sugar, and black pepper. Add the chicken and marinate for at least 10 minutes in the refrigerator.
  • Heat 1 tablespoon of oil in a skillet over medium-high heat (about 375°F or 190°C). Add the chicken and cook until browned. Remove the chicken and set aside.
  • In the same skillet, add the remaining oil. Sauté ginger, garlic, and onions until aromatic.
  • Add the fermented black beans and the bell peppers, cooking for 2 minutes.
  • Return the chicken to the skillet. Add the oyster sauce, Shaoxing wine, the remaining soy sauce, and water. Combine well.
