Ingredients

  • Cannellini beans, 2 cans (15 ounces each) [425g each]
  • Fresh spinach, 10 ounces [283g]
  • Garlic, 3 cloves (minced)
  • Dried thyme, 1 teaspoon
  • Dry white wine (pinot grigio or sauvignon blanc), 1/2 cup [120ml]
  • Chicken thighs (skinless), 4
  • Olive oil, 2 tablespoons [30ml]
  • Onion, 1 medium (chopped)
  • Salt, 1 teaspoon [5ml]
  • Black pepper, 1/2 teaspoon [2.5ml]
  • Optional for garnish: Parsley or basil, a handful (chopped)

Method

  • Season both sides of the chicken thighs with salt and pepper.
  • Heat olive oil in a pan over medium heat. Place chicken thighs skin side down and cook for about 8 minutes, until golden and crispy. Ensure the internal temperature reaches 165°F (74°C). Set chicken aside.
  • In the same pan, sauté onions and minced garlic until onions are translucent. Add thyme and stir.
  • Deglaze the pan with the white wine, allowing it to reduce slightly.
  • Add cannellini beans and fresh spinach, stirring until the spinach wilts and the beans are warmed through.
  • Return the chicken to the pan, skin-side up, among the beans and spinach. Season with additional salt and pepper if needed.
  • Cover and simmer for about 15 minutes, until chicken is thoroughly cooked and the flavors meld.
  • Garnish with chopped parsley or basil before serving.
