- Onion, finely chopped, 1 large
- Garlic, minced, 2 cloves
- Mustard powder, 1 tsp
- Dried thyme, 1 tsp
- Dried sage, 1 tsp
- Ground cloves, 1/2 tsp
- Water, 1/2 cup (120 ml)
- Double pastry crust (for top and bottom), enough for a 9-inch pie
- Butter, for homemade crust, 150g (5.3 oz)
- Flour, for homemade crust, 250g (2 cups)
- Salt, 1 tsp
- Cold water, for homemade crust, 4-6 Tbsp (60-90 ml)
- Egg, beaten, 1 (for brushing the pie)
- Beef gravy, for serving (optional)
- Salt and pepper, to taste
Method
- Start by making the pie crust (if making from scratch): Cut 150g of butter into 250g of flour and 1 tsp of salt until the mixture resembles fine breadcrumbs. Gradically add 4-6 Tbsp of cold water until the dough is cohesive but not sticky. Wrap in plastic and refrigerate for 1 hour.
- Preheat the oven to 350°F (175°C).
- Brown the ground beef and pork with the onion, garlic, mustard powder, dried thyme, sage, and cloves in a large skillet.
- Stir in the mashed potatoes and 1/2 cup of water, cooking until everything is well combined. Season with salt and pepper to taste.
- Roll out the pie dough on a floured surface and cut out circles to fit your pie tin or molds.
- Spoon the meat mixture onto one half of each dough circle, leaving room at the edges. Fold the dough over the filling and press the edges to seal.
- Place the pies on a baking sheet, brush with beaten egg, and bake for about 45 minutes to 1 hour, or until golden brown.
- Let the pies rest for a few minutes before serving. Serve with beef gravy, if desired.
