  • Heavy cream, 1 cup (240ml)
  • Cheddar cheese, grated, 1 cup (100g or 3.5 ounces)
  • Butter, 4 tablespoons (60g or 2.1 ounces)
  • Cayenne pepper, 1/4 teaspoon (1.25ml)
  • Salt, 1 teaspoon (5ml), plus more for seasoning
  • Black pepper, 1/2 teaspoon (2.5ml)
  • Lemon juice, 2 tablespoons (30ml)
  • Fresh parsley, chopped, for garnish (about 1/4 cup or 15g)

Method

  • Preheat the oven to 190C (375F).
  • Peel and quarter the potatoes. Boil in salted water for 20 minutes or until tender. Drain and mash with 2 tablespoons of butter, cayenne pepper, salt, and black pepper until smooth.
  • Spread the mashed potatoes in an even layer at the bottom of a baking dish.
  • Arrange the salmon fillets on top of the mashed potatoes.
  • In a bowl, mix the heavy cream with lemon juice, then pour this mixture over the salmon.
  • Layer the thinly sliced potatoes on top, dot with the remaining butter, and sprinkle with grated cheese.
