Ingredients

  • Self-raising flour: 500g (approximately 4 cups)
  • Baking powder: 2 tsp
  • Icing sugar (confectioners' sugar): 1 tbsp
  • Egg, beaten: 1
  • Milk: 1 1/2 cups (360ml)
  • Butter, melted: 60g (about 4 tbsp)
  • Optional for serving: Strawberry jam, clotted cream, or homemade orange honey butter

Method

  • Sift 500g of self-raising flour into a large mixing bowl. Add 2 tsp of baking powder and 1 tbsp of icing sugar to the flour and mix well.
  • In a separate bowl, whisk together 1 beaten egg and 1 1/2 cups of milk. Pour this mixture into the dry ingredients.
  • Add 60g of melted butter to the mixture and stir quickly until a sticky dough forms.
  • Flour a surface and let the dough rest on it for 20 minutes.
  • Preheat your oven to 220°C (428°F).
  • Roll out the dough to a thickness of about 2cm (0.8 inches) and cut into desired shapes.
  • Place the scones on a baking sheet and bake for 12-15 minutes or until golden brown.
  • Let the scones cool on a wire rack before serving with your choice of jam, clotted cream, or butter.
