- Beef sausages: 8 (about 1 kg or 2.2 lbs)
- Onions: 2 medium, diced
- Carrots: 3 large, peeled and diced
- Potatoes: 4 large, peeled and diced
- Chicken stock: 500 ml (about 2 cups or 16 fl oz)
- Malt vinegar: 2 tablespoons (30 ml or 1 fl oz)
- Worcestershire sauce: 2 tablespoons (30 ml or 1 fl oz)
- Fresh thyme or rosemary: 1 tablespoon chopped (or 1 teaspoon dried)
- Parsley for garnish: 1/4 cup chopped
- Olive oil: for browning sausages
- Salt and pepper: to taste
Method
- Preheat your oven to 180°C (356°F).
- In a pan, heat a little olive oil and brown the sausages over medium heat until evenly golden. Remove and set aside.
- In the same pan, sauté onions, carrots, and potatoes until slightly softened, about 5-7 minutes.
- Cut the sausages into chunks and add them back to the pan with the vegetables.
- Add the chicken stock, malt vinegar, Worcestershire sauce, thyme or rosemary, salt, and pepper. Stir to combine.
- Transfer the mixture to a baking dish and cover with foil.
- Bake in the preheated oven for about 1 hour until the vegetables are tender.
- Remove the foil, increase the temperature to 200°C (392°F), and bake for another 30 minutes to brown the top slightly.
- Garnish with chopped parsley before serving.
