Method

  • Heat a wok over high heat (approximately 450°F or 232°C). Add 2 1/2 tablespoons of peanut or vegetable oil to the wok.

  • Introduce 300g of thinly sliced chicken breast to the wok. Continue to stir-fry until the chicken is golden and cooked through, approximately 7-10 minutes.
  • Add 150g of sugar snap peas to the wok, stir-frying for an additional 3-5 minutes until crisp-tender.
  • Return the cooked mushrooms to the wok (if they were removed) and pour in 1/3 cup of hoisin sauce. Stir well to combine and coat the ingredients evenly. Cook for an additional 2-3 minutes until everything is heated through and the sauce has thickened slightly.
  • Serve the stir-fry over cooked jasmine rice, prepared according to package instructions. Garnish with a sprinkle of roasted salted peanuts before serving.
