  • Heavy Whipping Cream: 240ml (1 cup)
  • Graham Cracker Crumbs: 300g (10.5 oz)
  • Butter, unsalted: 115g (1/2 cup), melted
  • Sugar: 200g (1 cup) + extra 150g (3/4 cup) for lemon curd
  • Flour: 2 tablespoons
  • Egg Yolks (for lemon curd): 4
  • Fresh Berries (optional for garnish)

Method

  • Preheat your oven to 163°C (325°F). For the crust, mix Graham cracker crumbs, melted butter, and 100g (1/2 cup) sugar until it resembles wet sand. Press firmly into the bottom of a springform pan and bake for 10 minutes. Let cool.
  • For the filling, beat room temperature cream cheese with 200g (1 cup) sugar until smooth. Gradually add lemon juice, zest, and then eggs one at a time, followed by heavy cream and flour. Pour over the crust.
  • Prepare a water bath by wrapping the bottom of the pan in foil and placing it in a larger pan filled with hot water. Bake for 45 minutes until the edges are set but the center slightly wobbles.
  • Cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.
  • For the lemon curd topping, whisk together egg yolks, 150g (3/4 cup) sugar, lemon zest, and lemon juice over a double boiler until thickened. Remove from heat and whisk in butter. Cool and spread over chilled cheesecake.
  • Garnish with whipped cream, lemon slices, and fresh berries before serving.
