- 4 Weetabix, crushed
- 1 cup (85g/3oz) desiccated coconut
- 1/2 cup (110g/3.9oz) brown sugar
- 3/4 cup (180g/6.35oz) self-raising flour
- 1/2 cup (125ml/4.2fl oz) melted butter
- Marshmallow Topping:
- 1 tablespoon gelatine
- 1/2 cup (125ml/4.2fl oz) water
- 1 cup (220g/7.8oz) caster sugar
- 1/2 teaspoon vanilla extract (optional for flavor)
- Food coloring (optional)
- For Decoration (Optional):
- Freeze-dried raspberries
- Colored sprinkles or coconut flakes
Method
- Preheat the oven to 180°C (356°F).
- For the base, combine the crushed Weetabix, coconut, brown sugar, and self-raising flour in a mixing bowl. Add the melted butter and mix until well combined.
- Press the mixture firmly into a lined baking pan and bake for 15 minutes or until golden brown. Allow to cool.
- For the marshmallow topping, dissolve the gelatine in water as per package instructions. In a saucepan, heat sugar and water over medium heat until the sugar dissolves completely. Add the gelatine mixture and stir. Add vanilla extract and food coloring if using.
- Pour the marshmallow mixture over the cooled base and spread evenly. Decorate with freeze-dried raspberries, sprinkles, or coconut flakes if desired.
- Refrigerate for at least 2 hours or until set. Cut into slices and serve.
