  • Shaoxing wine (optional), 1 tablespoon (14.8ml)

Method

  • Heat a large, 12-inch skillet over high heat (about 200°C/392°F) until hot. Add vegetable oil.
  • Add the sliced mushrooms, spreading them for maximum surface contact, and stir-fry until they begin to char, about 2-3 minutes.
  • Introduce ginger and garlic, stirring constantly to avoid burning, for about 1 minute.
  • Add broccoli and continue to stir-fry for another 2 minutes until the broccoli starts to soften.
  • Crumble the tofu into the skillet and stir to combine.
  • Pour in the soy sauce, vegetarian oyster sauce, and optional Shaoxing wine, stirring everything thoroughly to ensure the mushrooms are well-coated and glossy, for about 2-3 minutes.
