  • Pasta (short variety preferred), 400g or 14 oz
  • Bell peppers (red and yellow), 2 each, diced
  • Zucchini, 1 medium, sliced
  • Mushrooms, 200g or 7 oz, sliced
  • Onion, 1 medium, diced
  • Cherry tomatoes, 150g or 5 oz, halved
  • Garlic, 3 cloves, minced
  • Italian seasoning, 2 tsp
  • Milk, 600ml or 2.5 cups
  • Vegetable stock, 600ml or 2.5 cups
  • Mozzarella cheese, 200g or 7 oz, shredded
  • Parmesan cheese, 100g or 3.5 oz, grated
  • Olive oil, 1 Tbsp
  • Salt, 1 tsp
  • Black pepper, ½ tsp

Method

  • In a large pot, bring salted water to a boil. Add pasta and cook for about 8 minutes, then drain.
  • Using the same pot, heat olive oil over medium heat. Add onions, garlic, bell peppers, zucchini, and mushrooms. Sauté until vegetables are slightly tender, about 5 minutes.
  • Pour in milk and vegetable stock. Bring to a simmer.
  • Return the pasta to the pot. Add cherry tomatoes and Italian seasoning. Season with salt and pepper. Stir well.
  • Let the mixture simmer gently for 10-12 minutes, or until the pasta is al dente and the sauce has thickened, stirring occasionally.
  • Stir in mozzarella and Parmesan cheese until melted and combined.
  • Serve immediately, optionally garnished with more Parmesan or fresh herbs.
