Ingredients
- Pasta (short variety preferred), 400g or 14 oz
- Bell peppers (red and yellow), 2 each, diced
- Zucchini, 1 medium, sliced
- Mushrooms, 200g or 7 oz, sliced
- Onion, 1 medium, diced
- Cherry tomatoes, 150g or 5 oz, halved
- Garlic, 3 cloves, minced
- Italian seasoning, 2 tsp
- Milk, 600ml or 2.5 cups
- Vegetable stock, 600ml or 2.5 cups
- Mozzarella cheese, 200g or 7 oz, shredded
- Parmesan cheese, 100g or 3.5 oz, grated
- Olive oil, 1 Tbsp
- Salt, 1 tsp
- Black pepper, ½ tsp
Method
- In a large pot, bring salted water to a boil. Add pasta and cook for about 8 minutes, then drain.
- Using the same pot, heat olive oil over medium heat. Add onions, garlic, bell peppers, zucchini, and mushrooms. Sauté until vegetables are slightly tender, about 5 minutes.
- Pour in milk and vegetable stock. Bring to a simmer.
- Return the pasta to the pot. Add cherry tomatoes and Italian seasoning. Season with salt and pepper. Stir well.
- Let the mixture simmer gently for 10-12 minutes, or until the pasta is al dente and the sauce has thickened, stirring occasionally.
- Stir in mozzarella and Parmesan cheese until melted and combined.
- Serve immediately, optionally garnished with more Parmesan or fresh herbs.
