  • Vegetable oil, 2 tablespoons (30ml)
  • Dark soy sauce, 2 tablespoons (30ml)
  • Oyster sauce, 2 tablespoons (30ml)
  • Light soy sauce, 1 tablespoon (15ml)
  • Sugar, 1 tablespoon (15g)
  • Water, 1 tablespoon (15ml)
  • Ground white pepper, ½ teaspoon
  • Lime slices, for garnish
  • Dried chilies, for garnish
  • Pickled chili sauce, for serving (optional)

Method

  • Soak the rice noodles in warm water until soft and pliable, about 10 minutes.
  • In a wok, heat the vegetable oil over high heat (190°C / 375°F). Sauté garlic and chicken until the chicken is nearly cooked, about 3 minutes.
  • Add the softened rice noodles to the wok, stirring to combine.
  • Mix in dark soy sauce, oyster sauce, light soy sauce, sugar, and water. Stir-fry for 2 minutes until the noodles are evenly coated and glossy.
