- Traditional or gluten-free flour (150g or 1 1/4 cups)
- Cornstarch or arrowroot powder (1 tablespoon)
- Butter (60g or 1/4 cup, softened)
- Egg yolks (from 2 large eggs)
- Egg whites (from 2 large eggs, beaten to stiff peaks)
- Icing sugar for dusting (optional, 2 tablespoons)
- Fresh berries or mint sprig for garnish (optional)
- Vanilla ice cream or whipped cream for serving (optional)
Method
- Preheat the oven to 180°C (356°F).
- Grease a baking dish well to prevent sticking.
- Cream together the butter, ¾ cup of sugar, and lemon zest until light and fluffy.
- Mix in the egg yolks, then gradually add the lemon juice, mixing well.
- Alternately fold in the flour and plant-based milk into the egg mixture until smooth.
