  • Cornstarch or arrowroot powder (1 tablespoon)
  • Butter (60g or 1/4 cup, softened)
  • Egg yolks (from 2 large eggs)
  • Egg whites (from 2 large eggs, beaten to stiff peaks)
  • Icing sugar for dusting (optional, 2 tablespoons)
  • Fresh berries or mint sprig for garnish (optional)
  • Vanilla ice cream or whipped cream for serving (optional)

Method

  • Preheat the oven to 180°C (356°F).
  • Grease a baking dish well to prevent sticking.
  • Cream together the butter, ¾ cup of sugar, and lemon zest until light and fluffy.
