Ingredients
- Penne pasta, 400g
- Tuna in olive oil, 2 cans (each 120g drained weight)
- Pizza cheese, 2 cups grated
- Leeks, 2 large (trimmed and cut into 1cm-thick slices)
- Garlic, 2 cloves minced
- Potato and leek soup, 1 can (400g)
- Fresh parsley, 1/4 cup chopped
- Lemon zest, from 1 lemon
- Lemon juice, 2 tablespoons
- Butter, 2 tablespoons (for sautéing) + 1 tablespoon (for sauce)
- Olive oil, 1 tablespoon
- Baby peas, 1/2 cup
- Salt, 1 teaspoon (or to taste)
- Black pepper, 1/2 teaspoon (or to taste)
Method
- Preheat the oven to 180C/160C fan-forced.
- Cook penne pasta in boiling water until al dente, then drain and set aside.
- In a large pan, melt 2 tablespoons of butter over medium heat. Add leeks and garlic, cooking until soft and golden, about 5-7 minutes. Season with salt and pepper.
- In a saucepan, melt 1 tablespoon of butter. Add the potato and leek soup, stirring until smooth. Season with salt, then add lemon juice, lemon zest, and 1 cup of grated pizza cheese. Stir until the cheese melts.
- Add the tuna, parsley, and the creamy soup mixture to the pan with leeks. Stir to combine.
- Add the cooked pasta and baby peas to the pan, mixing well.
- Sprinkle the remaining pizza cheese on top.
- Bake in the preheated oven for 30-35 minutes, then increase the temperature to 220C/200C fan-forced and bake for another 10 minutes to achieve a golden cheese topping.
- Serve hot.
