Ingredients

  • Penne pasta, 400g
  • Tuna in olive oil, 2 cans (each 120g drained weight)
  • Pizza cheese, 2 cups grated
  • Leeks, 2 large (trimmed and cut into 1cm-thick slices)
  • Garlic, 2 cloves minced
  • Potato and leek soup, 1 can (400g)
  • Fresh parsley, 1/4 cup chopped
  • Lemon zest, from 1 lemon
  • Lemon juice, 2 tablespoons
  • Butter, 2 tablespoons (for sautéing) + 1 tablespoon (for sauce)
  • Olive oil, 1 tablespoon
  • Baby peas, 1/2 cup
  • Salt, 1 teaspoon (or to taste)
  • Black pepper, 1/2 teaspoon (or to taste)

Method

  • Preheat the oven to 180C/160C fan-forced.
  • Cook penne pasta in boiling water until al dente, then drain and set aside.
  • In a large pan, melt 2 tablespoons of butter over medium heat. Add leeks and garlic, cooking until soft and golden, about 5-7 minutes. Season with salt and pepper.
  • In a saucepan, melt 1 tablespoon of butter. Add the potato and leek soup, stirring until smooth. Season with salt, then add lemon juice, lemon zest, and 1 cup of grated pizza cheese. Stir until the cheese melts.
  • Add the tuna, parsley, and the creamy soup mixture to the pan with leeks. Stir to combine.
  • Add the cooked pasta and baby peas to the pan, mixing well.
  • Sprinkle the remaining pizza cheese on top.
  • Bake in the preheated oven for 30-35 minutes, then increase the temperature to 220C/200C fan-forced and bake for another 10 minutes to achieve a golden cheese topping.
  • Serve hot.
