Ingredients
- Pumpkin, 2 lbs (about 907g)
- Coconut oil, 2 tbsp (30 ml)
- Fresh turmeric root, grated, 1 tbsp (15 ml)
- Garlic cloves, 3 large, minced
- Brown onion, 1 large, finely chopped
- Low-salt vegetable stock, 4 cups (946 ml)
- Coconut milk, 1 cup (240 ml)
- Salt, 1 tsp (5 ml) or to taste
- Black pepper, 1/2 tsp (2.5 ml) or to taste
- Optional garnishes: Toasted pumpkin seeds, coconut cream, chopped fresh herbs, croutons, spiced yogurt, chili flakes, fresh lemon juice, crumbled bacon
Method
- Preheat your oven to 425°F (220°C). Peel and chop the pumpkin into even chunks and spread them on a baking sheet. Roast in the oven for 15 minutes or until lightly browned and fragrant.
- In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent and tender.
- Grate the turmeric root directly into the pot, followed by the minced garlic. Cook for another minute, being careful not to burn the garlic.
- Season with salt and pepper. Then, add the roasted pumpkin and low-salt vegetable stock to the pot. Bring to a boil, then reduce the heat and simmer gently for 20 minutes or until the pumpkin is tender.
- Add the coconut milk to the pot and use a blender to blend the soup until smooth.
- Reheat gently, adjust the seasoning if necessary, and serve hot with any optional garnishes of your choice.
