  • Coconut milk, 1 cup (240 ml)
  • Salt, 1 tsp (5 ml) or to taste
  • Black pepper, 1/2 tsp (2.5 ml) or to taste
  • Optional garnishes: Toasted pumpkin seeds, coconut cream, chopped fresh herbs, croutons, spiced yogurt, chili flakes, fresh lemon juice, crumbled bacon

Method

  • Preheat your oven to 425°F (220°C). Peel and chop the pumpkin into even chunks and spread them on a baking sheet. Roast in the oven for 15 minutes or until lightly browned and fragrant.
