- Granulated sugar, 1/2 cup (100g or 3.5 ounces)
- Unsweetened cocoa powder, 2 tablespoons (for base) + 1 tablespoon (for icing) (15g or 0.5 ounces + 7.5g or 0.26 ounces)
- Baking powder, 1 teaspoon (4g or 0.14 ounces)
- Desiccated coconut, 1/4 cup (for sprinkling) (20g or 0.7 ounces)
- Unsalted butter, melted, 1/2 cup (113g or 4 ounces)
- Icing sugar, 1 cup (sifted) (120g or 4.23 ounces)
- Boiling water, 2 tablespoons (30ml or 1.01 fluid ounces)
- Vanilla essence, 1 teaspoon (optional) (5ml or 0.17 fluid ounces)
Method
- Preheat your oven to 180°C (356°F). Grease and line a baking pan.
- In a large bowl, crush the Weet-Bix biscuits into a fine consistency.
- Sift in the flour, sugar, baking powder and 2 tablespoons of cocoa powder. Mix well.
- Pour in the melted butter (and vanilla essence if using) and stir until the mixture resembles moist crumbly soil.
- Press the mixture firmly into the prepared pan, ensuring it's evenly spread.
- Bake for 20 minutes. Allow to cool completely in the pan.
- For the icing, whisk together the icing sugar and 1 tablespoon of cocoa powder. Gradually add the boiling water, stirring until smooth.
- Spread the icing over the cooled base and sprinkle with desiccated coconut.
- Allow the icing to set before slicing into 12 pieces.
